NEI APPAM / VELLA APPAM / UNNI APPAM / SWEET APPAM

Pandigai Sweet

Appam is a traditional southindian sweet recipe. This can be made in several ways and methods using different flour combination. Here is one such recipe which is very tasty at the same time easy to prepare also. It is also called unni appam in kerala.  Here we go for the crispy and tasty Ghee Appam ( Nei Appam - Nei stands for Ghee in tamil ) recipe.



Ingredients :

Rice Flour - 1 Cup
Wheat Flour - 1/4 Cup
Grated Jaggery - 1 Cup
Coconut Pieces - 1/4 Cup
Banana - 1 Small size
Ghee + Oil - 1/4 Cup
Cardamom ( Elachi ) Powder - 1/2 Teaspoon

Method :

 In a Mixing bowl add rice flour and wheat flour, mix well and keep it aside. Heat pan add 1/4 cup of water and grated jaggery and allow it to dissolve completely. Then filter it to remove dust and impurities. Heat pan add 1 Table Spoon of ghee and fry the coconut pieces for a minute or two, then add the jaggery syrup to it, and allow it to boil ( just 2 minutes ), to it add mashed banana and elachi powder ( Mash banana well with hands or using blender ). Stir well. Pour this hot syrup to the rice and wheat flour, and make it to a thick batter ( like Idli Batter - Dropping Consistency)

Heat the appam mould ( Appakarai ) and 1 Table Spoon of ghee+oil mixture in each pit ( hole ) and pour the batter till 3/4 th of the pit. When it is cooked then turn over and cook the other side, until it becomes golden brown on all sides. 

Tasty and Crispy Sweet Appam is ready to be served.
