BABY CORN & CAPSICUM MASALA | SIDE DISH FOR ROTI

Shimla Mirch Gravy


Looking for a tasty yet easy to make gravy for roti / chappathi then try this baby corn masala. I got this recipe from a supplementary book - tamil magazine ( Aval Vikatan ). I have not experimented much with baby corn, but while looking for a tasty gravy for roti, I found this interesting recipe, immediately i tried and came out awesome. Here we go for the baby corn & capsicum gravy recipe...



Ingredients :

Baby corn - 15 No's ( Cut in to 1& 1/2 inch pieces )
Onions - 2 No.s
Onions - 1 No ( Cut into cubes )
Capsicum - 1 Big ( Cut in to cubes )
Tomato Puree - 1/2 Cup
Cumin Seeds ( Jeera ) - 1/2 Teaspoon
Cashew nut - 5
Red Chilli Powder - 1 Teaspoon ( Adjust according to spice )
Coriander Powder - 1 Teaspoon
Cumin Powder - 1/2 Teaspoon
Tandoori masala - A Generous Pinch ( Optional )
Garam masala - 1 Teaspoon
Kasoori methi ( Dried Fenugreek leaves ) - A generous pinch.
Tomato Sauce - 1 Teaspoon
Milk - 1/2 Cup

Method :

Saute cubed onions with a pinch of salt and little oil until golden brown, saute capsicum in the same manner as onions, but make sure it doesn't change colour. It should be crisp and half cooked.
Cook the baby corns with salt and a pinch of turmeric until soft.

Take a pan, add little oil, now add roughly chopped remaining 2 onions to it, saute until it turns slight pinkish, now add tomato puree saute for 2 minutes, now add redchilli powder, coriander and cumin powder, saute for a minute. Then take a blender add the sauteed ingredients, along with it add, tomato sauce, cashew nut and grind it to a smooth paste.

Now add one table spoon of oil, add cumin seeds, after it splutters add the ground paste, and saute in low flame for 5 minutes, now add cooked baby corns, sauteed capsicum, onions, milk, enough salt, kasoori methi, tandoori masala, garam masala, and bring it to a boil in low flame.

Tasty Baby Corn & Capsicum Gravy is ready to be served with hot roti's and Phulkas. you can serve it along with any variety rice too, like jeera pulav, or vegetable pulav.

Notes :

I have used different colored capsicum, you can use any one of it too..

I have added tandoori masala to get a nice colour for the gravy, its optional, if you dont have just skip adding it.

Instead of capsicum , boiled and fried potatoes and cauliflower can be added.

Instead of half cup tomato puree , you can grind 2 Big Tomatoes to a fine paste.

Cream can also be added for that rich taste.
