VEGGIE BEAN QUESADILLA


I learnt this mexican recipe from my sis in law, who is in US. At first I was skeptical, in adding yellow squash/parangikkai with greens, but believe me its an awesome combination. It tasted so good, so try this Veggie bean quesadilla (pronounced as 'kay-sah-DEE-yah') Here goes the recipe.....





Ingredients:

For Filling :

Yellow Squash/Parangikkai - 1 Cup (Chopped in to small Cubes)
Onion - 1/4 Cup
Any type of Greens/Keerai - 1 Cup
Capsicum (Any Colour) - 1/2 Cup (Finely Chopped)
Green chilies - 2 or 3 Nos (Finely Chopped)
Salt - As per taste.
Olive oil / Any type of oil - 1 Teaspoon

Method :

Heat oil in a pan, add onions, saute for about 2 minutes, add capsicum and squash and green chilies and enough salt, cook until its half done, now add the greens of your choice, and cook until its done.

For Rajma/Kidney Beans Mexican style :

Rajma Beans - 1/2 Cup
Onion - 1 No. (Medium Sized) Finely Chopped
Bay leaf - 1 No.
Red chili powder - 1 Teaspoon
Turmeric powder - 1/4 Teaspoon
Cumin Powder (jeera) - 1/2 Teaspoon
Minced Garlic - 1/2 Table Spoon
Oregano - 1/4 Teaspoon
Oil - 1/2 Table Spoon
Salt - As per taste
Coriander Leaves - 1 Table Spoon

Method :

Soak rajma / kidney beans over night and cook them with enough salt until soft. Heat oil in a pan add bay leaf, then add finely chopped onions, sprinkle little salt and saute till it becomes soft, then add minced garlic, cook until the raw smell leaves, add red chili, cumin, oregano, salt and mix well. Now add cooked rajma to it, and simmer for about 15 to 20 minutes. Now garnish with coriander leaves, and a teaspoon of sour cream. Mexican style rajma masala is ready.

You will need :

Tortillas ( Pronounced as 'tor -Tee-ya' ) - As needed
Salted Butter - As needed.
Mozzarella Cheese - As required.

Method :

Heat pan, mean while, spread the tortillas with little butter on both sides, and place it on pan, on one side of tortillas spread cheese, then add a spoonful of veggie filling and rajma beans, spread some cheese over it and fold the tortilla, so that it makes a semi circle. Cook both the sides on medium flame, until cheese melts and tortillas turns golden brown. Cut in to pieces.

Serve with sour cream ( if you don't have sour cream, then normal curd which is two or three days old can also be used), salsa, tortilla chips.

Variation :

For filling, sky is the limit, you can use any type veggies of your choice.
You can skip the beans and add only veggies too. I have added beans to make it wholesome (for the needed protein and fibre)

For filling, you can make it in the normal style (Rajma masala) with chili, turmeric, cumin, and garam masala too.
