VEG BURGER RECIPE | CRISPY BURGER PATTY | CRISPY VEGETABLE PATTY




Veg Burger Patty


Burgers are my family favourite. We all love the crispy patty sandwiched between the soft buns. I have tried so many patties, it tastes good but not crispy like the ones we get in Mc Donald's or KFC. When i searched for the patty recipe in internet i got an idea of the how crispy and crunchy exterior is made. After looking so many recipes I came up with my own. The results were awesome. The patties were very crispy and crunchy in each bite.  The best part is it stayed crispy n crunchy after hours. So give it a try. Here we go for the super crispy crunchy burger patty.





Ingredients :

For Burger Patty :

Boiled Potatoes - 3 Nos ( Medium Size )
Mixed Vegetables ( Carrots, beans, peas ) - 1 Cup
Onion - 1 No
Ginger garlic paste - 1 Table Spoon
Red chilli Powder - 1 Teaspoon
Coriander Powder - 1 Table Spoon
Amchoor Powder ( Optional ) - 1/2 Teaspoon
Turneric powder - 1/8 Teaspoon
Pepper Powder - 1/2 Teaspoon
Green chilly - 1
Garam masala - 1 Teaspoon
Poha / Aval - 1/2 Cup
All Purpose flour / Maida - 1 & 1/2 Table Spoon
Coriander leaves - 2 Table Spoon
Salt - As per taste

For Batter :

All Purpose flour / Maida - 1/2 Cup
Corn Flour - 1/4 Cup
Coarsely powdered corn flakes - 1/4 Cup
Oil - 1 Table Spoon
Water - As needed.

To coat :

Fresh Bread Crumbs - 1 Cup

For Arranging Burgers :

Fresh Burger buns - 4
Lettuce leaves - Few
Sliced onion - Few
Sliced Tomato - Few
Shredded cabbage - As needed
Mayonnaise - As needed
Cheese Slice - 4 No.s

Method :

Boil potatoes and mash it well with out any lumps . Finely chop carrot, beans and onion. Soak Poha / Aval in hot water for atleast half an hour, crush and squeeze out the water from it and keep it aside covered. Tear few bread slices and crumble it by grinding in a mixer, fresh bread crumbs is ready to use.

Heat oil in a pan add finely chopped onions and sauté until soft now add ginger garlic paste, finely chopped green chili to it, and cook until the raw smell leaves, then add carrot, beans, peas, add turmeric, chill, and coriander powder to it , cover and cook until the vegetables become soft, add pepper powder, amchoor Powder, garam masala nd mashed potatoes to it, finally add finely chopped coriander leaves, soaked & squeezed poha, maida ( all purpose flour ) ,salt and mix well. Using a masher mash well, so that all the ingredients gets mashed and becomes a dry mixture. Allow the mixture to cool. Divide it into equal portions and shape each portions to a round flattened disc, and keep aside.

In a bowl add maida ( All purpose flour ) , corn flour, coarsely powdered corn flakes, salt, oil, add water little by little and make it to a thick batter and keep it aside.

Spread the bread crumbs in a plate.

Now take the round shaped disc, and dip it in the batter, then coat both the sides with bread crumbs. Now press gently so that bread crumbs sticks to the patty well. Now again dip it in the batter, take out coat it in bread crumbs. Repeat the process for all the remaining disc. Once you are done, refrigerate the patties for atleast an hour.

We repeat the coating process twice to get a super crispy and crunchy exterior. Refrigeration makes the coating settle well in each patty. This helps the bread crumbs to stick with the patties well , while deep frying.

Heat oil in a pan, and deep fry the patties until golden brown. Super crunchy and crispy vegetable burger patty is ready :-))

Now to arrange burgers.
I used my eggless burger buns.
Take burger buns slit it in to two roundels, spread mayonnaise evenly on both the inner sides, now take the bottom roundel place letucce leaf, cheese slice, top it with fried patty, onion slice , tomato slice, shredded cabbage , lastly put the top roundel . I Didn't had cheese slice so skipped adding it to burger. 

Crispy crunchy and delicious burger is ready to eat.

Notes :

All purpose flour and poha ( aval ) helps the mixture to bind well. You can skip adding poha ( aval ) but make sure the mixture is really dry.
Make sure you refrigerate the patties for atleast an hour. Very important step so don't miss it.
You can make these patties ahead and freeze. When ever you need just take out, and deep fry.
You can skip pepper powder and add more green chili
Amchoor powder is optional , we like tanginess so added, if you don't have just skip or add lemon juice.
