VEGETABLE KURMA / KORMA

Back to blogging after a long gap :-) My LO kept me busy, so could not concentrate on my blogging. I Thought that i have to start blogging from this new year, So here is a easy vegetable kurma recipe, it can be easily made with few available ingredients... This vegetable kurma is a very good accompaniment for roti, phulka, idly or even dosas. I Love to have it with hot rice topped with ghee :-)
So here we go for the recipe..





Ingredients :

Mixed Vegetables - 1 and 1/4 Cup ( I used Cauliflower, Potato, Beans, Carrot, Peas )
Onion - 2 Nos 
Tomato - 2 Nos
Ginger Garlic Paste - 1 Teaspoon
Turmeric Powder -1/4 Teaspoon
Sambhar Powder - 1 Table Spoon  or use Red Chili Powder 2 Teaspoon & Dhaniya Powder 1 Teaspoon )
Green Chilies - 2 Nos

To Grind :
Grated Coconut - 1/2 Cup
Fennel Seeds - 1 Teaspoon
Cashews - 6

To Temper :

Oil / Ghee - 2 Table Spoon
Cardamom - 1 No
Clove - 1 No
Bay Leaf - 1 No
Cinnamon - 1/2 Inch Piece
Kalpasi / Black Stone Flower - Crushed very little

Method :

First finely chop the vegetables.. In a pan heat oil / ghee add cardamom, clove, bay leaf, cinamon, kalpasi , then add finely chopped onions, add little salt to it and saute for 1 minute now add ginger garlic paste to it and saute well until the raw smell goes off now add tomatoes, turmeric and sambhar powder or ( Redchilli powder and Dhaniya Powder ) to it and saute well for 2 minutes now add the finely chopped vegetables to it add  little water and salt, now cover and cook until the vegetables are done. In the mean while grind coconut, fennel seeds and cashews to a very fine paste. When the vegetables are cooked well add the ground paste to it and bring it to a boil. Garnish with finely chopped coriander leaves, few curry leaves and a teaspoon of ghee. Delicious Vegetable kurma / Korma is ready to be served with roti / Chappathi / Dosa / Idly or hot rice. Enjoy it hot hot :-)

Notes :

If you don't have fresh grated coconut replace it with coconut milk. In that case replace fennel seeds and cashew with just 1 teaspoon of garam masala powder.
