CAULIFLOWER KOFTA CURRY | No Onion No Garlic recipe

Phool Gobi Kofta

Here is a tasty side dish for roti / pulav which has no onion no garlic. In this recipe, I have used cauliflower but broccoli can also be used instead. I have not stuffed anything inside the kofta's, if you wish, a small panner cube or cheese can be inserted in the middle of each kofta's. I have made this as a no onion no garlic recipe, please see the notes section if you wish to add onion and garlic.




Ingredients :

For making Koftas :

Grated Cauliflower - 2 Cups
Potatoes - 3
Finely Chopped Green chilies - 3 No's
Corn flour - 1 & 1/2 Table Spoon
Garam Masala - 1/2 Teaspoon
Turmeric Powder - 1/4 Teaspoon
Finely Chopped Coriander leaves - 2 Table Spoon
Baking powder - A pinch
Salt - As required
Oil - For deep frying

For Gravy :

Tomato Puree - 1 Cup
Cumin Seeds - 1/2 Teaspoon
Red chili Powder - 1 Teaspoon ( Adjust according to spice level )
Turmeric Powder - 1/4 Teaspoon
Coriander Powder - 2 Teaspoon
Ginger Paste - 1 Teaspoon
Garam masala - 1 Teaspoon
Chopped coriander leaves - 2 Table Spoon
Milk - 1 Cup
Salt - As required

Method :

For making Kofta's :

Boil and mash the potatoes well. Make sure it doesn't have any water in it. Now heat 1 teaspoon of oil in a pan add green chilies grated cauliflower and sauté well, cover and cook for 5 minutes. Now in a mixing bowl add cooked cauliflower, mashed potatoes, corn flour, turmeric powder, coriander leaves, baking powder, salt and mix everything well. Make it in to small balls ( if you wish you can add a small paneer cube or cheese cube in the centre ) and deep fry in oil with medium flame, keep it aside.

Now for making gravy :

Heat a table spoon of oil in a pan, add cumin seeds, when it starts to splutter, add ginger paste to it, now add tomato puree, red chili powder, coriander powder, turmeric powder and allow it to cook until all the moisture evaporates and the mixture gets thickened. Now add little water to it and allow it to cook for 5 minutes, now add milk and koftas to it and cook until the mixture starts boiling. Now add finely chopped coriander leaves and switch of the flame. In a pan add one teaspoon of butter when it starts to melt add garam masala to it and sauté for a 2 seconds and add it to the gravy.
Yummy cauliflower kofta curry is ready to be served with roti or pulav.

Notes :

If you wish to add onion and garlic to the recipe, then heat oil in a pan add cumin seeds when it starts to splutter add 1 big onion finely chopped to it and sauté with a pinch of salt with ginger garlic paste, when the raw smell goes of add the tomato puree to it and continue with the same procedure as mentioned above.
