Here is a easy to make punjabi dessert Gajar ka Halwa recipe. Though there are many ways to prepare gajar halwa, I found this method to be easy and less time consuming. The same method can be used to prepare beetroot halwa too, just replace the carrot with beetroot. Here we go for the recipe...
Ingredients :
Grated Carrots - 1 & 1/2 Cups
Milk - 1 Cup
Sugar - 1/2 to 3/4 Cup ( Depending the sweetness you need )
Ghee - 3 Table Spoon
Elachi ( Cardamom ) powder - 1/4 Teaspoon
Cashews - Few
Pistachios - Few
Raisins ( Optional ) - Few
Method :
Fry Cashews, Raisins, and pistachios in ghee and keep aside.
Heat pan add a table spoon ghee and fry the grated carrots and cook for about 2 to 3 minutes, now add the milk and cook until the milk evaporates and the carrots are cooked well. The mixture should become dry. Now add the sugar and keep stirring for about 5 to 7 minutes. When the mixture thickens, add ghee, cardamom powder, fried cashews, pistachios, raisins to it and keep stirring for some 2 to 3 minutes. When the halwa starts leaving the sides of the pan. Switch off the flame and tranfer to the serving bowl. Yummy carrot halwa is ready to be served.
Notes :
You can take 2 cups measurement of milk, boil it well so that it reduces to 1 cup. This thickned milk can also be used instead of milk. Reduce the sugar in this case.
You can use Khoya also.
