VEGETABLE SANDWICH \ SPECIAL SANDWICH

Vegetable Sandwich is my all time favorite be it toasted or plain. I generally make lot of variations in the stuffing, by using different vegetables and the spice powder.  Here is one such stuffing, which is very tasty and easy to make. I avoid butter for toasting, instead used olive oil, as it gives the same crispiness to the bread. So here you go for the special sandwich recipe......




Ingredients :

For Stuffing :

Mixed Vegetables - 1 Cup ( Very Finely chopped )
Onion - 1 No. ( Small )
Tomato - 1 Medium Size
Ginger Garlic paste - 1/2 Teaspoon
Red chilli powder / Sambar Powder - 1 Teaspoon
Coriander ( dhaniya ) Powder -  1/2 Teaspoon
Turmeric Powder - 1/8 Teaspoon
Garam masala Powder - 1/2 Teaspoon
Oil - 1 Teaspoon
Coriander leaves - 2 Table Spoon ( Finely Chopped)

To Temper :

Cumin Seeds ( Jeera )  1/2 Teaspoon

Method :

Cook vegetables ( I used Carrots, beans, peas ) until soft. Heat oil in a pan add jeera, then add onion, sauté with a pick of salt for a minute, now add ginger garlic paste saute for another one minute and add the tomatoes and cooked vegetables, red chili ( if you are using sambar powder, no need to add dhaniya powder separately) Dhaniya , turmeric , garam masala powder , and mix well in low flame until the spices blend evenly with the vegetables. Lastly add salt and coriander leaves, mix well and keep aside. Now the Vegetable Stuffing is the ready.

For the Bread Toast :

Bread Slices - 10 Nos.
Green Chutney - As Required
Vegetable Stuffing - As required

Method :

Now Take two bread slices apply green chutney on one side of each bread. Spoon out vegetable Stuffing and spread it evenly over the bread. Cover it with the other bread. ( The plain side must be in the top and bottom )
Now toast the bread until golden brown on both the sides using olive oil or butter.
Tasty & Healthy Vegetable Bread Toast / Special Sandwich is ready.

Notes :

You can temper it with Ajwain / Carom seeds instead of jeera.
You can add any vegetable of your choice.
You can also apply tomato ketchup on one side of the bread and use green chutney for the other slice.
Enjoy the warm bread toast with your cuppa :-)

  3. I have a hard time with sandwiches since we life changed to a vegetarian diet. Miss sandwiches :(
    This sandwich does look good, will hopefully satisfy this urge of ours, thanks for sharing.
