KARAMANI SUNDAL | NAVARATRI RECIPES

Black eyed beans / Lobia is called Karamani in tamil. During the navaratri festival we prepare this sundal, and offer to god. It is a simple, healthy and Protein packed dish. This can be a ideal evening snack. Here is the recipe..




Ingredients :

Black Eyed Beans / Lobia / Karamani - 1 Cup
Salt - As per taste

To Temper :

Mustard Seeds - 1 Teaspoon
Dry Red chili - 2 or 3 Nos.
Oil - 1 Teaspoon
Asafoetida - 1/4 Teaspoon
Curry Leaves - Few
Grated Coconut - 2 Table Spoon

Method :

Soak Black eyed beans for 6 to 8 hours. Cook the black eyed beans with a pinch of salt until soft. Don't over cook. Just 2 or 3 whistles is enough. It should be firm yet soft. 
In a pan, heat oil, add mustard seeds, add red chilies, asafoetida, curry leaves fry for a minute, add cooked black eyed beans, enough salt to it ( If you feel its little wet keep stirring until it becomes dry ) . Lastly add grated coconut fry again for a minute or two in low flame. Simple ,Tasty and yummy Karamani Sundal / Lobia salad is ready to be served

Notes :

Green chili can used instead of Red chili
Chopped coriander leaves can be used for extra flavor.
