PASTA IN WHITE SAUCE

Vegetarian Pasta

Me and my hubby both love Italian cuisine, so I keep experimenting new dishes with pasta and macaroni.  I have tried the baked version Cheesy Veggie Pasta, but wanted to try stove top method. So tried this Penne in white sauce, which came out really well, and liked it so much. This is an ideal dish for those who love pasta and cheese. I Wanted to try pasta for breakfast so made it with less cheese. 
Here you go for the recipe.


Ingredients :

Pasta - 1 Cup
Onion - 1 No. ( Finely Chopped )
Carrot - 1/4 Cup ( Grated)
French Beans - 5 Nos (Very Finely Chopped)
Pepper Powder - 1 Teaspoon
Chili flakes - 3/4 Teaspoon
Italian Spice Mix - 1 Teaspoon ( Optional )
Olive oil - 1 Table Spoon

For White Sauce :

Corn flour - 2 Teaspoon
Maida / All Purpose flour - 2 Teaspoon
Grated Cheese - 2 Table Spoon
Milk - 1 Cup


Method :

Cook pasta with enough water, salt, and a teaspoon of oil, until soft yet firm enough to bite. Drain and wash twice, mix with a teaspoon of olive oil and keep aside. 
In a mixing bowl, add milk, corn flour, and Maida ( all purpose flour ) to it , and mix well with out any lumps. 
Heat pan, add olive oil, sauté onions, with a pinch of salt, till soft, now add grated carrots and beans to it and sauté until its 3/4 th cooked. Now add the mixture ( Milk, maida, cornflour ) to it, and stir well in medium low flame. When the sauce is about to boil ( if you feel the sauce is very thick then add little more milk) add the grated cheese to it , and mix well, so that the cheese melts, and gets mixed with sauce. Don't let the sauce to boil.
Now add the cooked pasta to it, pinch of salt, pepper powder, chili flakes, Italian seasoning. Mix well, and cook for about 2 minutes in medium flame. 
Lastly I added a table spoon of chopped coriander stems to it. You can skip it if you don't want to.
Pasta in white sauce is ready to be served hot. 
This is an easy breakfast / dinner recipe, so give it a try, I am sure your family will love this :-)

Notes :

If the sauce becomes too thick add little more milk. If you don't have Italian spice mix, you can skip that.
If you have oregano alone then you can add that alone too.
You can increase or decease the pepper powder and chili flakes according to the spice level you need.
White sauce gets thicker when it becomes cold, so add more milk if needed.
You can add veggies of your choice.
Serve hot. I am sure kids would love to have this again and again :-)

    1. Thanks, I have used mozzarella cheese, you can use any cheese. Make sure it just melts and blends well with sauce.
