I Usual make Idly Upma with left over idlies. I wanted to try fried idly for change, but didn't want to deep fry it, as idlies will consume lot of oil. So tried baking the idlies in oven. It turned out super crisp, and tasted similar like deep frying it. We all liked this version of masala idly, so thought of sharing the recipe with you all. Here goes the recipe....
Ingredients :
Left over Idly's - 3 or 4 No.s
Onion - 1 No ( Big Size)
Idly Milaga Podi - 2 Table Spoon
Green chilies - 2 No (Slited)
Mustard Seeds - 1/2 Teaspoon
Urad dal (Black Gram ) - 1 Teaspoon
Channa Dal (Bengal Gram) - 1 Teaspoon
Cashews - 1 Table Spoon
Oil - 2 Table Spoon
Curry Leaves - Few.
Method :
Pre heat oven to 180 degree C for 10 minutes. Line a baking tray with aluminum foil and keep it ready. Cut the Idlies in to small square pieces, and spread it over the lined baking tray, drizzle oil generously and mix well, so that the oil coats evenly in cubed idlies, bake until it turns golden brown,(around 10 minutes) turn sides. So that golden browns crust form evenly on both the sides. Keep an eye on the oven. Don't over bake it, idlies might scorch. (I have given an appox timing, increase or decrease the timing accordingly)
Heat oil in a pan, add mustard seeds, then add urad dal, channa dal, cashews, fry till golden brown, add onions, green chilies, curry leaves, a pinch of salt and saute until the onions becomes soft, add Idly milaga podi, baked idlies and give it a toss.
Tasty and quick snack baked Masala Idly is ready to be served.
Variations :
You can deep fry the idlies too, and prepare it in the same way.
Vegetables can also be added with it.
My favourite preparation with leftover idli..every body at my home loved this :)
