I happen to taste veggie wrap / Kathi roll in Bangalore, and I simply loved it. I wanted to try it out with some of my favorite veggies. It's a simple yet very filling and healthy dish.
It is also called Vegetable Frankie or Kati roll. Here is my version of Veggie wrap....
Ingredients :
Wraps (Ready made) / Left over roti's - 5 Nos
Capsicum (Yellow, Red, Green) - 1/2 Cup (cut in to thin strips/Julienne)
Onion - 1/2 Cup (Thin Slices)
Carrot - 1/4 Cup (Thin Slices)
Cabbage - 1/4 Cup (Shredded)
Green chilies - 3 to 4 No's (Finely Chopped)
Ginger Garlic paste - 1 Teaspoon
Garam masala - 1 Teaspoon
Coriander leaves - 1 Table Spoon (Finely Chopped)
Lemon juice - 1 Teaspoon
Salt - As per taste.
Green Chutney - As required.
Oil - 1 Table Spoon
Method :
For Filling :
Heat oil in a pan, add onions, sprinkle little bit of salt, and saute for a minute, then add ginger garlic paste, and green chilies and fry till the mixture till raw smell leaves. Now add the veggies (Carrot, Cabbage, capsicum) and salt, fry in high flame. Make sure that the veggies are not fully cooked, it has to be crunchy. Now add garam masala to it, saute for some two minutes, switch off the flame, add lemon juice and chopped coriander leaves. Now the filling is ready.
I have used the store bought wraps (whole wheat), you can use the ready made one's available in store's or left over roti's (Chappati).
Microwave the Wrap/Roti's for 30 seconds. If you don't have a microwave you can toast both the sides on a Tawa/Pan for 1 or 2 minutes.
Now take one Wrap / Roti (spread little butter first, then a layer of green chutney and keep a tablespoon of veggie filling, horizontally in the end of the wrap/roti, roll it tightly, tuck in both the sides, and cut it diagonally. Yummy Vegetable wrap is ready to be served.
You can serve it with tomato ketchup.
Variation :
You can add your favorite veggies.
Any left over poriyal/Curry can be used as a filling.
You can even spread some cheese and microwave it for 1 or 2 minutes until cheese melts.
You can use grated paneer along with veggies or Paneer burji as a filling ;-)
